 There are several excellent collections edited by Ellen datlow and/or Terri Wilding (I think I have those names right) but they have editied other collections as well - so not everything by themautomatically qualifies.

Sherri Tepper's Beauty is based on sleeping beauty but also incorporates quite a few other fairy stories, and like anything else by her is well worth looking for. There is another book called Beauty by Robin Mckinnle> (based on B and the beast iirc) Joan D Vinge has written a novel called The Snow Queen based on the HC Anderson story, there are two sequels. For younger readers (probably upper primary rather than teen) Nicholas Gray has done some great versions of fairy stories. Gregory maguire "Confessions of an ugly stepsister" does Cinderella. Angella Carter's "The bloody chamber" is good but not for the squeamish. Jane Yolen's Briar Rose. The Tam Lin storyis the basis of pamela Dean's novel of that name and of Diana Wynne Jone's "Fire and Hemlock"

 Gregory Maguire has written several stories of adult/young adult versions of fairy stories: Confessions of an Ugly Stepsister, Mirror Mirror, Wicked (The wicked witch
 of the west) and Lost which is a bit more on the horror side.  You can access information about them on the HarperCollins website at www.harpercollins.com.au

 There is also Ella Enchanted by Gail Carson Levine and two collections of two fractured fairytales called Spinning Tales 1 and Spinning Tales 2.  No longer in stock, but are available on indent.

 Rose and the Beast by Francesca Lia Block is also a collection of stories based on fairy stories.  Fantastic collection.
